Fried Green Tomatoes Make Me Happy....

Today is my first day of  5 days off so this morning I went to Kroger to get pick up a few things.... but I came out with something NOT on my list, tsk, tsk, tsk, how many times does this happen to you? To me... ummm, ALWAYS, and then if I don't have a list, I don't come out with what I went in for in the first place. But, these called my name, and boy howdy... I ANSWERED!!!

First day of no school, I deserve a treat for lunch, RIGHT? Ok, I wanted a treat and fried green tomatoes are some kinda treat!!! Yummy! 

Then on Facebook, Ashley Hinkle asked if anyone knew  of a recipe for Fried Green tomatoes..It is official.. It is FRIED GREEN TOMATO DAY!!!

So here is what I did....
(note: this recipe is not rocket science or (NRS), it is more like.. umm thrown together.. adjust as you need or feel like)


They are so pretty sliced up!
Slice some green tomatoes.. I used 2 of my babies... I like them sliced on the thin side, I know some prefer them thicker... again NRS.... just slice away...

Then in a small bowl beat two eggs with about a cup of milk

In another bowl  put in some corn meal and  some  all-purpose flour, salt, pepper, and I add some seasoned bread crumbs, but if you don't have them, corn meal and flour is sufficient (NRS).

To your skillet add oil. (Corn oil, Canola oil, Olive Oil)  I had Canola oil and I added a bit of bacon grease, cause I am southern and yanno a little wicked....bacon grease wicked... :)   and depending on how thick you sliced them, is how fast you fry them, thicker the slower, thinnner you can fry at a higher temp.  No higher than medium though..


Drain on paper towel and EAT!

YUMMY!!!



Here is a basic (NRS) recipe....

Fried Green Tomatoes

4 firm green tomatoes
salt and pepper to taste

2 eggs
1/2 milk

2 cups cornmeal
1/2 cup all- purpose flour
1/2 cup seasoned bread crumbs (optional)
1 Tbsp. Salt
1 tsp. pepper

Slice the tomatoes and salt and pepper.

Beat the eggs and mix with the milk and put tomatoes in the milk mixture to soak while you mix the cornmeal/flour mixture.

In a seperate bowl, mix the cornmeal, flour  (bread crumbs) salt and pepper.

Heat a skillet and add the oil of choice, (I put in enough oil to come half way up the tomato.  So again depend how thick you slice and how big your skillet is.)

Dip each tomato slice in the cornmeal/flour mixture and place in oil.   Cook until golden brown, flip and then drain on paper towel.


The eating has began.

Hobos and a Scarf

I posted this yesterday and then it disappeared into the internets lost and never to be found... so let's try again.

I haven't felt so well this  weekend and just wasn't feeling up to cooking yesterday and made the easiest meal I could think of... well, except for picking up the phone and ordering something to be delivered.  Most who know this meal will associate it with camping, but Mama always made it in the oven and called it Hobo dinner.   You can put any veggies in it, but depending on what you put in it, whether it is  basic Hobo Dinner or High Falooting Hobo Dinner.  Mama says if you add mushrooms then it is High Fallooting.

In the FAMOUS Hart Cookbook there is a recipe for it called Child's Supper.  That is the the one I am going to post here, but I will put what I do differently, but only if I happen to have the ingredients.

   It was the duty of our children to cook a meal once in a while.  Any 6 or 8 year old can fix this.
   Peel a potato and cut in small squares; 1 carrot cut in small squares, 1 small onion (chopped), salt and pepper.  Take a 12 to 18-inch (piece of) foil, place all ingredients in center of foil.  Add 1/4 pound of hamburger meat; wrap airtight.  Bake in oven approximately 30 minutes or until vegetables are tender.  This  can be eaten  from foil with fork.




I season the hamburger with the trinity uhh I mean salt, pepper and garlic, and lay onion slices on the hamburger and sometimes bell pepper. Yesterday I had bell pepper and I chopped the onion and mixed them in the hamburger.  I was thinking you could add some tomato sauce or tomato paste.  I also add soy sauce and/or worchestershire sauce.  I also use baby carrots, cause I dislike peeling things, I do usually peel the potatoes. If I have red potatoes I don't.

Ok on to the scarf. It was 76 degrees here yesterday, but you know this is Texas  and I might need a knitted item at any MOMENT.



I tried to get a good picture of this but couldn't get the color right. It is a deep ruby red and fuzzy and soft and yummy... and the temp is suppose to be 20 degrees cooler this week.  This is might even be too warm for 56 degrees.
